Persimmons have a delicate, vanilla-like flavor and are only available in California in the fall. They are can be eaten fresh like an apple or cut into bite-size slices and be peeled. One way to consume ripe persimmons, which may have soft texture, is to remove the top leaf with a paring knife and scoop out the flesh with a spoon.
