Fresh Ahi Tuna
Fresh, Sashimi Grade-Ahi Tuna - great for searing quickly in a pan or on the grill. Ahi tuna, also known as yellowfin Tuna has a medium-mild flavor with very firm texture, similar, some say, to swordfish. The flesh is deep red while raw, is often used for sashimi, and is best cooked rare. The tuna needs little flavor enhancement; just brush with olive oil and sprinkle with seasoning. Tuna can also marinate for several hours without becoming “cooked.” Try a marinade of white wine, a little oil and some brown sugar for an hour or two before cooking or marinate in sesame oil, soy sauce, ginger, garlic, green onion, and lime juice. A quick pan sear on both sides, and dinner is ready.
