Pasteurized cows milk, salt, calcium chloride, cultures, and rennet.
Ragged Point is a small format bloomy rind triple crème cow’s milk cheese named for the gateway to Big Sur just North of our farmstead. The paste stays firm as the cheese matures, and does not become oozy at all. As Ragged Point ages past four weeks, it takes on a peppery character and a distinct cream line underneath the rind forms. Enjoy this cheese with apples, honey and crusty bread.
Founded in 1871 Stepladder Creamery and has been family-owned and operated for three generations. The creamery is simply an old idea reimagined. About 100 years ago, our ranch was a part of the Harmony Valley Creamery Association, a network of immigrant Swiss and Italian dairy farmers that grazed cattle on the lush coastal valleys of San Luis Obispo County. This Association was born out of a drought that forced ranchers to rethink how to make a living off of their land. Jack first discovered his love for goats after visiting a goat dairy in Northern California with his sister in high school. Shortly thereafter, he began procuring fresh goat milk and making his own cheeses at home while working at a tech startup in Palo Alto. Quickly finding himself drawn to cheesemaking more than anything else, Jack decided to purchase his own goats and move to Stepladder Ranch to take over his grandfather’s ranch operations and build a creamery and dairy. Michelle's background is in event planning and management and wine, and she moved to the central coast to attend Cal Poly and never left. Jack and Michelle met during the inception phase of the creamery, and they have been running the ranch together since.
